		<description><![CDATA[This little store at the foot of a unit block near the Royal Brisbane Hospital always seems to have 6-packs of something good on sale for about $2-$3 off.<br />
I have gotten Little Creatures Pale for as low as $14.99, and White Rabbit Dark for that as well.<br />
Other notables have been White Rabbit White, Mountain Goats, Hargreaves, 3 Ravens, and a few others that slip my mind right now.<br />
Usually they are reduced to $16.99, but when Dan's & 1st Choice sells it for $19.99, it's a deal!<br />
It just takes someone who gives a damn about beer to pick up a franchise!]]></description>

		<title><![CDATA[Something's Gone Wrong!]]></title>

onto my 4th brew...becoming quite an obsession!  <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/rolleyes.gif' class='bbc_emoticon' alt=':rolleyes:' /> <br />
this one is <em class='bbc'>supposed </em>to be similar to a newcastle brown ale (i found it at Dano's - & <em class='bbc'>really </em>liked it!)<br />
quite an interesting process as this is the first brew that i've employed a 'boil'...<br />
<br />
here's the recipe that i used...<br />
<br />
    * 200g Crystal grain - milled<br />
    <br />
    * 1.5kg Light Malt extract Liquid<br />
<br />
    * 250g Wheat malt - dry<br />
    * 1kg dry Light Malt ext<br />
    * 250g golden syrup<br />
    * 250g brown sugar<br />
    <br />
    * 20g Goldings hops<br />
    * 20g Fuggels hops<br />
<br />
    * 1.7kg Black Rock Nut Brown Ale <br />
<br />
    * Safale S-04 yeast<br />
    <br />
<br />
Steep the grain (in bag) for 30 mins in 2 lt ~65c deg water, rinse grain with 2 cups boiling water. Turn off heat & add liquid malt extract, stirring constantly. Add 1L H2O & bring it to the boil - remove from heat or use spray bottle to avoid boil over. Ten minutes after hot-break, add 1/3 the Goldings hops and boil for 15 minutes, then add the other 1/3, boil for 15 minutes. Add the other 1/3, boil for 15 minutes. Turn the heat off, add the sugar, malt and the Fuggles hops, and let it sit for 10 mins.<br />
Then strain the whole lot into your fermenter, add another 2 litres boiling H2O & add the black rock LME & other ingredients while hot & dissolve. Then fill to 21 litres with H2O. Add yeast, and wait.<br />

Attendees will taste between 5 – 7 different craft beers during the Master Class, matched perfectly to different dishes. 		<description><![CDATA[g'day all, i was checking out another homebrew site a few weeks ago(sorry nathan)and someone on there reccomends using napisan to clean and sanitize your fermenter (it has to be one without enzyme the baby one is ok) so i gave the fermenter a quick rinse to get the cake off the bottom but,left the brown ring on the top and put in 3 caps to 30 warm water and left it overnight. well bugger me if it wasnt spotless the next morning so i drained it then a quick little rinse and there was no residual smell at all.works a treat.cheers jamo.]]></description>

i tried little creatures, fat yak, james squire, red back, kilkenny, guinness, boags, beez neez, & a couple of other less memorable ones!  <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/unsure.gif' class='bbc_emoticon' alt=':unsure:' /> i'm not a big fan of 'hoppy'/fruity/citrus beer by nature, i prefer the malty flavour!<br />
<br />
the short list became - James Squire Amber Ale #1 (my *new* favourite beer)<br />
                      - Boags Premium (my regular favourite)<br />
                      - Red Back (interesting, smoky bacon flavour)<br />
                      - Kilkenny. (a St. Paddy's favourite)<br />

the ingredients used for my James Squire Amber Ale Clone are as follows...<br />
<br />
Muntons Blonde 1.5kg.<br />
Amber Malt Extract 1.5kg.<br />
Cluster Hops 5g - boiled for 10 minutes in 250 ml water.<br />
Safale US-05<br />

I am still very new to home brewing but I am loving it. Still not confident enough to try the whole mash thing yet - so I love these can/kit recipes.<br />

I did a batch of the Chillie Ginger beer and it was great. <br />
And then last night I saw the Honey Ginger Lager recipe.<br />
<br />
I was thinking of a hybrid of the two to make a chillie ginger lager. I still want it to taste like a beer but with a hint of Ginger and a subtle bite of the Chillie.<br />
<br />
If I do the following will it work - just taste like crap.<br />
<br />
Chillie Ginger Lager<br />
Makes 23 Litres.<br />
<br />
Ingredients:<br />
<br />
o 1Can of Lager<br />
o 4 fresh red chillies<br />
o 100 g grated ginger. <br />
o Saflager S-23 Yeast<br />
<br />
Directions:<br />
<br />
1. Cut up Chillies and grate the ginger. Boil in 1ltr water for 20mins<br />
1. Make as you would a normal kit beer, adding the chillie and ginger mix directly to the wort. <br />
3. Finish brew as a normal kit beer. <br />

		<description><![CDATA[I liked the sound of the lime and coriander recipe - after some discussion with the guy in my local home brew shop we came up with a slight variation to this recipe<br />

Ingredients<br />
<br />
I can Tooheys Classic Dry Lager<br />
500g Dried Light Malt<br />
1.1 ltr Can Coopers Liquid Wheat Malt<br />
25g Coriander seeds<br />
zest annd Juice of 2 oranges<br />
Safbrew T58 yeast<br />
1 kg Coopers Dextrose<br />
<br />
Instructions<br />
<br />
1. In 3 litres of water boil the Light and Whate Malt for 1 hour<br />
2. Crack (but not grind) the Coriander seeds/<br />
3. Zest and juice the oranges<br />
4. 10 Mins before the hour is up add Corainder and Orange juice and zest.<br />
5. Add Can of lager to fermenter and pur in the boiled malts<br />
6. Add water to make up 23 litres.<br />
7. Dissolve in Dextrose<br />
8. Sprinkle over yeast.<br />
<br />
I just bottled it after 3 weeks and it smelled awesome - cant wait to taste it.<br />
<br />
I am still very new to all this and dont really understand what I am doing.<br />
<br />
The OG was 1090.<br />
final gravity at bottling was 1018. (stayed steady at that for about 4 days - suggesting to me it was done) <br />
<br />
Can anyone enlightent me is the OG very high? and what does that mean...<br />

		<description><![CDATA[Hi guys - Just a question about yeasts - i've used a couple of Saf yeasts (and had excellent results with their WB one) - and they're 11.5g.  The yeasts that come with a Cascade/Coopers/Tooheys are 7.5g (or is it 7g?) - anyway, why is there less than the Saf yeasts?  Should I use a sachet and a half of "standard" yeast or just chuck the standard yeast and always go the Saf yeasts.  Do all kits come with 7g sachets?<br />

New here & to home brewing - have been doing quite a bit of reading on this forum since finding it the other day.<br />
My wife & kids bought me a brewing kit (fermenter, heater, bubbler & assorted bits n pieces) for my birthday last week from our local home brew shop, I made up my first brew on Monday after a bit of research & confidence building...not wanting to stuff up my first brew! (the actual beer consisted of a local brew - sovereign gold lager - malt & hops. superior beer improver - dextrose, light malt & maltodextrin. dried brewing yeast - which i primed before pitching) <br />
Anyways, the brew kicked off smashingly, bubbling away nicely within 24 hrs - temp remaining stable. on Thursday - day 3 - the bubbles stopped...today still no bubbles! fast acting yeast?<br />
the original sg of the brew was 1045, currently sitting on 1020 - yesterday & today. still too early to bottle...<br />
the samples I've tested for sg are quite opaque & very gassy/foamy.<br />
I took the lid off today & gave it a stir as i noticed a very thick layer of white sediment on the bottom of the fermenter. <br />
I intend to leave it in the fermenter until at least next Monday-Wednesday (7-10 days) & when the sg reaches the correct level.<br />
is it too early to panic & am I doing everything correctly?<br />
any advice would be greatly appreciated!<br />

20gms fuggles hop pellets [10 min boil]<br />
wyeast english ale yeast<br />

the boil ends up a bit thick i'd recommend a 3lt boil <br />
strain into fermenter [it takes a bit of work to push it through]<br />
top up to 23lts<br />

Colour: 29EBC (pretty much in the middle of Pale Ale and Rogers')<br />

Pale Ale, munich, caramalt and dark crystal - grist is fairly similar to the Stimulus IPA but with a slightly higher dark crystal addition to richen up the malt slightly.<br />

100% Cascade from the 2009 crop - bittering hop addition to the kettle, huge addition to the whirlpool, standard addition to the hopback.<br />

Flavour Profile<br />

BrewDog held the title last year with their 32% strength beer, Tactical Nuclear Penguin, before recently losing it to the German brewer Schorschbrau, who released a 40% strength Schorschbock. Sink the Bismarck is to be sold online retailing at £40 for a 330ml bottle.<br />

While pushing the boundaries for their high strength beer, BrewDog are also drawing major attention for the way they market their beers. This is after drinking three long necks of coopers green, with the intention of using the sedement to harvest coopers yeast for my next brew,something I have never tried before. I'm trying to make an imitation little creatures pale ale. Is there anyone out there who is willing to swear their life that the coopers dry yeast is as good an the yeast I was planning to harvest from the coopers green or alternatively that the yeast that will grow in bottom of the coopers green bottles is better. finally, if none of this makes sense we can that atleast confirms that the three long necks of coopers green drunk for the purpose of the experiment are very good.]]></description>

This year I got in early enough to make predictions through all the brackets! As I got down through it, my choices got tougher as the beers I've had & enjoyed came up against each other. This year, I'm going with <strong class='bbc'>Black Raven Brewing's Trickster IPA</strong> to go all the way! Tough competition with Flying Dog Snake Dog, Lazy Boy, Diamond Knot, Boundary Bay, Big Sky, and Rogue Yellow Snow in the running. I've had them all at one time or another, and would be happy to see any of them win it. I'm sure there are a lot of the east-coast IPAs that will give a good run as well. I printed out my bracket picks and put them on the wall much to my wife's chagrin, and will have fun with this.]]></description>

                               -Nackaz Special Heritage Lager-<br />
     <br />
     1kg can coopers Heritage lager<br />
     750g coopers light liquid malt extract<br />
     1kg brewing sugar/dextrose<br />
     23 litres spring water <br />
     <br />
     As usual re-hydrate the supplied yeast (not completely shameful... supplies stuff that is) in 200ml of <br />
     cooled boiled water and stir. Yeast should foam a little. Make sure wort below 28c max before adding. <br />
     Add re-hydrated yeast and follow supplied instructions. Fermentation should begin within 12 hrs, subside within<br />
     3-4 depending on season, enviro. etc. Vary Malt to personal taste.  <br />

     Temp. before adding yeast 23-25 max. <br />
     * My OG: 1052 FG: 1016 (obviously will vary for many reasons). <br />

		<description><![CDATA[g'day all,i hate to admit this but i made a cerveza for the little woman in dec,i had 35 corona stubbies lying around in the shed so i made a brew like the malt shovel. 1 coopers cerveza can=11.5 litres , exept i put in 125gms dextrose and 12ml finings with 2 coopers ale yeast's had in the fridge ( it ended up 12 lt to get the sg right).anyway i'm having one now along with a real corona ,and i'll be buggered if i can tell much difference. i'm not a big fan of this style of beer but the missus loves it. you know what they say  "happy wife,happy life".jamo]]></description>

During the past 50 years or so, the red wine glass has grown from not only being able to enhance the flavor and aroma of the wine, but also into a kind of work of art that people are proud to put on display; a showcasing of the glasses style and elegance.<br />
The red wine glass is available in a variety of sizes and shapes, each catering to one of a wide range of wine types and flavors. The red wine glass is perfect for a formal dinner party or as a means of relaxation after a hard day at the office.<br />
A glass made for red wine is characterized by its rounder bowl that is wred wine glassider than other wine glasses. This provides more air to enter the glass and react to the wine creating a subtle alteration to the flavor and aroma. This oxidization helps smooth out the complex flavors found in a red wine.<br />
Two particular styles to red wine glasses are the Bordeaux glass and the Burgandy glass.<br />

		<description><![CDATA[It's getting close to that season and I'm looking at what beers to take down with me for Chrissy.<br />
Mum and Dad got a little house down on the Hawksburry which we're all going to go down to. I'm going to tow my Malibu down and park it out front on the jetty and we plan on eating nice food, drinking nice wine/beer and skiing when we're not too bloated (or pissed). <br />
So I said I'd bring the boat and beer, mum and dad have the house, one brother is doing the food, the other is bringing wine, sister is doing not much. <br />
So what do you guys reckon as a good selection? I'm going to try put together something for day drinking out on the water, something nice for the evenings, a nice dark Larger/Stout for the roast plus maybe something to go with some Seafood. Here is what I'm thinking:<br />
- Knapstien Larger or Murray Pale (evening/late afternoon beers)<br />
- Matilda Bay Dogbolter (the dark choice)<br />
- Pikes Oakbank Larger or Gauge Roads Wahoo (the days drinkers)<br />
I'm a bit unsure as to what we can have with the seafood. Wasn't the biggest fan on Bluebottle (they claim as 'the' Seafood beer) but I only ever had in once. What do you think?]]></description>

		<description><![CDATA[I tried a lot of beers this week at the Fed Square Microbrewery showcase. The Boatrocker Alpha Queen Pale Ale was my outright favourite of all the new beers I tasted.<br />

Why ? There were some great beers on offer. However, the Alpha Queen had that unique combination of a fantastic and truly unique taste.<br />
<br />
It is advertised as highly hopped, and that aspect of the beer is unmistakable from the first whiff to the last drop.<br />
<br />
So what? There are plenty of other highly hopped beers out there, what's so special about this one?<br />
<br />
To me, its the entire package.<br />
<br />
The Alpha Queen has a very full flavoured, creamy taste such that even a small sip feels like you have taken a great big swig of hoppy, aromatic goodness. It finishes up with a combination of a slightly spicy and faintly sweet aftertaste.<br />
<br />
I would drink this with something lightly spiced, like Moroccan style grilled chicken skewers, Malaysian curry puffs or grilled (mild) spicy sausage. <br />
<br />
This is a great beer and deserves success. Go and get some.]]></description>

I'm heading off to Sydney for the first time ever (Gasp... Horror!!) on Thursday for a conference. And while I was there I thought I'd stop in at some pubs and see what tastes they have on tap.<br />

Just wondering if any of you guys know any nice pubs in Sydney. Preferably ones that have more interesting/unique beers on tap (or at least Coopers Sparkling and Dark on tap.. haven't had them on tap for a while now.. haha!)<br />

		<description><![CDATA[Just a quick questiuon in reagrds to carbonating in bottles, my first brew i did i tried after 2 weeks in bottle and i know it is suppposed to stay longer but i just tried one bottle because i wanted see what difference the time makes to the taste, anyway this beer a lager was awful but carbonated, my next brew which is an american pale ale i tried one bottle at two weeks and whilst being a very tasty brew is not very well carbonated almost flat, have i done something wrong or is it likely that the carbonation process is just taking longer? By the way i keep them stored in old cupborad temp has been around 15 to 20 degrees on average.<br />

		<description><![CDATA[I have just had a crack at my own variation ona recipee as being new to brewing ive stuck to the recipees, but ti thought what the hell and gave an idea i had a go, I used Nathans little creatures recipee and then substituted the cascade hops with Amarillo hops, last night i bottled it but when i first did the hydrometer reading i couldnt resist giving it a little taste which i have done on my other brews and they have not been particularly pleasant but this one was good, flat, but good so now i cant wait to start drinking this beer......<br />

		<title><![CDATA[My Beer's Flat]]></title>

I have made a couple of lagers and, following the instructions, transfered the wort after primary fermentation into a 2nd fermentor for another week or so. After this I bottled and sugered each bottle as usual. After bottle conditioning, I opened a bottle of each brew to find that both were flat.<br />
Is there anything I can do or do I just leave them alone alot longer.<br />
Why does this happen, is it possible that when I transfered to the 2nd fermentor the yeast was left behind, this I think is unlikely but when Ive 2nd fermented before the same problem occurs. <br />

 put a little creatures down on saturday and its slowly bubbling out of the air lock 3 days in <br />
all other beers i have done have been very aggressive in the first few days (coopers pale ale/brew enhancer no2 kit)very basic <br />
im up to keg number 4 (still green with the keg thing finally got off my arse and bit the bullet bought the kegs and havent looked back. i cant believe i used to clean all those bottles  been brewing in bottles for about 5 years) <br />
straight into the keg and bring it down gas it up and game on.<br />

with this new one i thought i would stray from the basic and used <br />
<br />
coopers pale ale 1 tin<br />
dex 500g<br />
black rock light malt 1 tin<br />
1 hops bag cascade 15g<br />
1 hops bag willamette 15g<br />
both steeped for 10mins and into the fermenter in a clean stocking <br />
<br />
can anybody see any thing wrong with this <br />

		<description><![CDATA[Im just started brewing have just bottled my first lot, i had a starter kit and everything seemed to be all good with that one so i put down a "wetpack" american pale ale which was bit more involved- boiling the mix for an hour adding hops etc which all seemed to go ok got it into the fermenter which is where things have gotten a little different, first it started bubbling from the airlock in a matter of a few hours other one took a day, and within 12 hrs was bubbling full on and now after 3 days its almost stopped i took a hydrometer reading its at 1020 so not ready yet but seems like its gone too quick also there is a huge amount of sediment i can see in the bottom of the fermenter!!!!! Any advice would be great<br />

		<description><![CDATA[Sorry for the lack of activity over the last three to four weeks but I have been on annual leave at South West Rocks and Port Macquarie and at neither place had internet activity (or mobile phone coverage half the time for that fact either).<br />
<br />
Whilst I was at Port though I visited The Little Brewing Company and was pleasantly surprised to find that they still had some Mad Abbot left, which is their Abbey Ale (review to come), so I bought a few four packs of that, but more exciting was that they will have a new limited edition brew coming out soon to replace it.<br />
<br />
Unfortunately I didnt get a chance to tour the brewery as they only do tours for groups of 10 or more and it was only me and my fiance, but maybe another time. After all they are only 4 hours away, give or take a bit for roadworks.<br />
<br />
Anyway, this was just a quick post to let you all know I'm still alive and I'll have some more Little Brewing Company news soon as they've added me to a mailing list and I'll pass this info on as soon as I have it.<br />

		<title>Bottling My First Cider? Help!!!</title>

		<description><![CDATA[Started fermentation about 2 and a half weeks ago with 1kg brew blend 15, put pear schnapps in once the airlock movement stopped, on thursday morning(4 days ago). The airlock is still moving very very slowly, with a SG reading of 1007 at the moment. Just wondering if i should be bottling it yet? The schnapps said it only needed to be in there for two days, but forgot to check the gravity before adding it, so am unsure.<br />

		<description><![CDATA[Hi all, I'm new here. I'm currently in my first year of uni, living the college life in Canberra. I turned 19 this year, and have a penchant for a few cups (not glasses, I'm not nearly classy enough for that) of "goose" (that's goon and juice) before going out. And yet despite all this, I've discovered recently that I really, really like my beer (mainly due to the local SupaBarn's unexpectedly good range of quite obscure Australian beers). I'm sure compared to most here my knowledge is almost zero, as I've only recently started experimenting further than Coopers Green and Crownies (not the worst place to start off, but definitely a bit boring). Anyway, I was hoping to join here and expand my knowledge a little, get a few suggestions. Unfortunately, being a uni student who is also planning to travel overseas at the end of the year, I can only afford the occasional higher-priced 6-pack.<br />
<br />
Anyway, to give an idea of my tastes (and level of experience), a few of my favourite brews are Little Creatures Pale, Coopers Sparkling, and Fat Yak Pale (itching to try Alpha, apparently Fat Yak is to Alpha what Coopers Pale is to Coopers Sparkilng, but haven't found it yet). Really just starting to discover some of the better local Australian beers, let alone those from overseas. As you can probably tell, I enjoy my pale ales! And if I'm looking to get drunk, and quickly, I'm more than willing to down a few Pure Blondes. Would never pick it just to enjoy though.<br />

Oh, and I have absolutely no time for VB or Tooheys Extra Dry (Platinum or standard). VB is a given for most people I know, but for some strange reason I can't figure out, TEDs are all the rage.]]></description>

It has been a hard three months, every time i open the cupboard door the bottles just say drink me  <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/rolleyes.gif' class='bbc_emoticon' alt=':rolleyes:' /> <br />
So finally i can, and enjoy the hard work i have done. I have started with my Heineken and can say delicious  <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/cool.gif' class='bbc_emoticon' alt='B)' /> <br />
I have wanted to try this the most as it is a bit out of my usual beer comfort zone. I am however still looking forward to the clasic teds which i love the most.<br />

		<description><![CDATA[Anyone had it yet? I was down in Sydney for a 30th Friday night and I noticed it on tap there. I hadn't even heard of it until I saw the tap label. I had already had quite a few Coopers Pale Ale before I tried to but damn it was nice. Very sweet, friuty what I thought would be a Pale Ale, but the label says Sundown Lager.... <br />
I was pretty hosed by the time I got to try it, so my flavour sense wasn't all that accurate. But I drank it from around 9:00 all the way through until 2:30 and didn't get over it at all. That's pretty rare for me.  <br />
Anyone else had a try of it yet?]]></description>

i'm just chucking the contents of the tin in the fermenter with a kilo of plain white sugar, topping up with tap water and adding the yeast, as i've been reading off here, i've been putting it in the laundry with the heater in it and a towel wrapped around it. usually sits from sunday til the wednesdayish off the following week, so bout 10 days.then bottling for near on 2-3 months, any advice u could give me would b great.<br />

as described above i have had a few different brands and styles of beer but want to find a beer that really suits my taste. I don't really have the time to travel to smaller breweries and most often i will be buying my stock from BWS, Liqorland or Dan Murphy's which are close by.<br />

i really enjoy the taste of carlsburg and crown lager, not a massive fan of heineken though. mexican style beer isn't really a favourite of mine either, any recommendations? <br />
<br />
yes, i realise i don't really sample many lesser known brands but i am willing if you can recommend any beers that are similar to the creamy malt taste of carlsburg or crown lager. i don't mind spending a bit to find a beer that suits my palate but it generally should be available at the stores mentioned above.<br />
<br />
any help would be great, and i'll leave personal feedback on any beers suggested. cheers<br />

		<description><![CDATA[I'm hoping someone here has tasted Mac's Hop Rocker because I'm trying to get some help on coming up with a recipe. At the moment I'm doing extract brews and have recently started using liquid yeast. I've got a bit of an idea on the ingredients but some help on volumes would be good.<br />

I've read they use cascade and nelson sauvin hops. To get nelson sauvin I'll have to order them but I've seen they're used in black rock extracts so i was thinking of using their pilsner blond. I've also heard they use crystal malt but I've never used this before so i have no idea whether this would be good. I was also thinking of using Wyeast 1056 American Ale Liquid Yeast. <br />

		<description><![CDATA[If anyone is from the Gold Coast, I picked up a carton of Asahi at Dan Murphys Parkwood yesterday for $40!!! Quite a difference from their usual $65. Drinking it like water in Japan made me grow a little affectionate to it so when it pops up on special every now and then I buy a couple of cartons. <br />
They had about 15 cartons sitting there which had got caught out in the rain.... As a result, they were packed in a random carton and didn't have their 6 pack holder things. Can't complain though, that's the cheapest i have ever seen them.]]></description>

		<description><![CDATA[Hello Beer Lovers,<br />
I've been reading the board for a week or two and finally got around to joining. I thought I'd start off by giving a little background on why/how I got into experimenting with different beers. <br />
I'm a touch younger than your average beer lover (only just celebrating my 20th birthday last week), so my tastes aren't quite as evolved just yet. I have a very hectic schedule, studying full time commerce and working around 50 hours a week; so as you can imagine the days of going out and getting pissed dripped away pretty much the day I left school. So to fill the gap, I started experimenting with different beers. At first I kept to the typical really dry, really crisp Pilsiners, until the taste eventually wore thin and I moved on to more and more things.  After about a year I had tried so many different beers that I couldn't remember what I like or even what I had tried. So i started a 'beer wall' to try and keep track of it all. Certain area's were for beers I thought were nice, other areas for 'don't buy again'. Up until 6 months ago it was great; until we decided to renovate our house... Putting 200-odd empty stubbies into storage for 4 months just didn't seem feasible, so I decided to throw the whole thing out and start from scratch when we moved back in - under some new rules.<br />
 - I buy them by the 6 pack and commit to drinking it over at least two occasions (not just 1 to 4 stubbies like i used to)<br />
 - No beer was to be considered 'too expensive' to try<br />

So all in all, I think it works pretty well. Not only does it help you keep track of what you're doing, but i think it compliments my games room quite well - or at least it did when it was all there. I thought I'd upload a pic so you can see what I mean. They are arranged from left to right depending on what I like the most. It doesn't last like that forever though, as you can't tell if you liked a particular beer more than one you drank 6-12 months earlier... As it gets bigger, it just turns into 'areas' that you like more than others.<br />
The second pic gives you a view of how many beers there actually were. It went the WHOLE way around the room, including what you can't see and the sideboard has 4 levels below it. <br />

AN issue concerning the quality of XXXX Gold has demonstrated why, for all modern technology's intrusion into the world of beer-making, you still need a brewer.<br />

Late last year Lion Nathan launched its Natural Beer Promise initiative, where it stripped out some additives and preservatives used to make a number of the company's beers, including Gold.<br />
<br />
This allowed Lion Nathan to market the beers under the Promise as using only natural ingredients, a smart move in an increasingly health-conscious world.<br />
<br />
Things that got the chop included caramel colouring agents, sulphur dioxide used to mop up oxygen during the bottling process, and tetra hops, a liquid hop extract which helps stabilise foam.<br />
<br />
But recently word filtered back to Lion Nathan that its Gold wasn't glittering.<br />
<br />
Publicans in western Queensland and northwest New South Wales were reporting that there was something wrong with the beer's foam. The head was collapsing too quickly.<br />
<br />
"It wasn't really a big issue," Lion Nathan chief brewer Bill Taylor said. "A few publicans were telling us that there were some rumblings from regular drinkers, stuff like 'Old Joe in the corner over there said so-and-so'.<br />
<br />
"There were no problems reported in the cities. Maybe in those country areas the old-timers sit on their drinks a bit longer and notice things. Perhaps it has something to do with the extreme weather patterns we have been having.<br />
<br />
"We don't know exactly what is causing the problem, but we decided to act before it got out of hand."<br />
<br />
Anxious to avoid the rumour mill lurching into gear, Lion Nathan has removed Gold from the Natural Beer Promise camp and reverted to using tetra hops to ensure consistency.<br />
<br />
Some brewers, including Taylor, argue that tetra hops are a natural product anyway, even if it is manufactured, but there are enough people who beg to differ for it to be deemed a controversy not worth fighting over.<br />
<br />
"This is why we need brewers," Taylor said.<br />
<br />
"You have to have human involvement, a brewer's sensory skills, to ensure beer taste and presentation are up to scratch."<br />

		<description><![CDATA[Hi all.  I just found this forum, wish I knew about it years ago.  For my first post i thought i'd share my favorite lager recipe.<br />
<br />
<strong class='bbc'>Ingredients</strong><br />
Cascade Golden Harvest Lager Beer Kit<br />
1kg Dextrose<br />
300g Light Dry Malt<br />
150g Dry Corn Syrup<br />
10g Hallertau Hop Pellets (Bittering)<sup class='bbc'></sup><br />
15g Saaz Hop Pellets (Finishing)<br />
Saflager W34/70 Yeast Sachet<br />
<br />
<strong class='bbc'>Directions</strong><br />
Boil Hallertau hops in 2-3 cups of water for 20 minutes, adding the Saaz hops for the last 2 minutes.  Empty the beer kit, dextrose, malt and corn syrup into the fermenter.  Strain the hop mixture into this and add 2L of boiling water.  Mix until all ingredients are dissolved.  Fill with cold water to make 22L, then pitch yeast.  Best if fermented below 20<sup class='bbc'>o</sup>, preferably below 15<sup class='bbc'>o</sup>.<br />

		<description><![CDATA[howdy folks!  I've been researching over the last few months while I was overseas but just getting into the practical side of the craft in the last couple of weeks. I was leaning towards an easy drinking summer beer for my next brew, perhaps a pilsner style concoction. its pretty steamy at the sunny coast at the moment and the only temperature control I'd have is an esky with frozen water bottles are there any ale yeasts that would give me the right flavours? i havent settled on a recipe yet so i could use some recommendations in that department too. any help would be much appreciated, cheers.]]></description>

		<description><![CDATA[I went to University in Middlesbrough in England.  I lived next to a Samuel Smith owned pub, which mean't the only beers they sold were from Samuel Smith.  <br />

I really disliked all of their beers, I tried quite a few of them but for the life of me I could not bring myself to enjoy them.  Admittedly at that time I was skulling large quantities of macro largers and ignoring everything else (unless it was on special).<br />
<br />
I recently tried some of the Samuel Smith beers again and was absolutely blown away. I have had somewhat of an epiphany and discovered they brew the most delicious complex beers.  I gave the oatmeal stout a score of 10 and I didn't do that frivolusly, it was truly an excellent beer.<br />
<br />
On the other hand I don't enjoy the macros as much anymore, I find them a bit bland; but still good for a warm day.  <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/cool.gif' class='bbc_emoticon' alt='B)' />]]></description>

The Fermenter is already in the coolest room in the house but the temperature is still pretty high ie. 28-30 C<br />

		<title>Coopers Stout - Chunky Yeast</title>

I enjoy a good beer as well as making a good beer! <br />
<br />
I was wondering how does coopers get that very chunky yeast in the bottom of the Coopers Best Extra Stout.<br />
<br />
Most bottle conditioned beers either have muddy yeast, cloudy or a sediment stuck on the bottom of the bottle.<br />
<br />
Coopers Pale = Muddy or Cloudy<br />
Coopers Sparkling = Muddy or Cloudy<br />
<br />
The exception being the Stout which has big chunks, and no muddy, cloudy or solid sediment stuck to bottle. I am yet to find another beer with similar yeast chunks!!<br />
<br />
Now I presume all three of those coopers beers use the same yeast strain and the bottle contains the same yeast as fermenation. <br />
<br />
Now my real question is... how do I achieve the same result in my homebrew??? <br />
Should I culutre the yeast from a couple of stout bottles... or what???<br />
<br />
When making a very dark stout like coopers... you don't want any cloudy or muddy yeast in the bottles as it would ruin the appearance, but you still need and want the yeast in the bottle for conditioning and character.<br />

		<title>Newbie - Confused</title>

This will probably seem like a stupid question but I'm new to home brewing. My fiancé bought me a home brew kit for Christmas.<br />

I am slightly confused as I have several different beer mixtures saying to just sprinkle the yeast over the top (not mentioning to stir in) whilst other say to add the yeast and specifically mention to stir in the yeast well.<br />
<br />

I have put in a Brigalow Draught mixture and it said to sprinkle the yeast on top (again not mentioning to stir in) have I done the right thing or will I need to start again?<br />
<br />

I've also noticed that some mixtures mention to take a hydrometer reading before adding the yeast then taking another measurement once fermentation has completed.....is this correct<br />
<br />
I've already had a brew fail as the container was not air tight, nor where there any bubbling and after 7 days the hydrometer reading was 0%....so not really off to a good start <img src='http://www.beerguide.com.au/forums/public/style_emoticons/default/tongue.gif' class='bbc_emoticon' alt=':P' /> then again I could be doing it all wrong.<br />

I recently took the tour of the Castlemaine Perkins Brewery at Milton and thought I'd put in a bit of a review.<br />

We went at 4pm on a Friday as a bit of a work function, just before our office Christmas dinner. I'd recommend taking the train there, Milton station is right across the road (as famously seen on the front of any XXXX), but you can get a park in the side streets around there (but then not be able to partake of the drinks...)<br />
<br />
You get there and mill around the shop for a while waiting for the tour to start and then the hilarity begins. It starts with a slightly tongue-in-cheek video, and an introduction from the tour guide and then you walk through a huge cask door into a strange room with some videos. The next room you sit down and then are revolved around the room to 4 or so different dodgy wax figure and props things with dodgy voiceovers etc. A great laugh. You then see some old ads. Really good!<br />
<br />
The next part is strange. You get walked through some very old buildings. Brewing equipment everywhere. Ugly walls and 70s looking fixtures everywhere. Dead plants in little garden things outside stairwells. Not polished at all, but would you want the XXXX brewery to be polished? They then take you through a malt room and then a hops room with a big open bag of hops you can touch and smell if you dare. Then it's through to a big neat room with a high tech setup through glass walls on the left. There are computers in there with seriously cool looking stuff on the screen and a guy actually came in and checked some stuff, so we knew it just wasn't a fancy screensaver.<br />
<br />
This room looks out through glass windows down to some huge beer equipment porn and there is a hilarious video and equipment demostration of the process in miniature behind you. Not bad.<br />
<br />
Then it's through to a dodgy bottling room with some old bottles and an ancient bottling machine. This room smelt. You then walk down and around and through to the converyor belts! Cans and bottle everywhere!<br />
<br />
Then it's through to the Alehouse, where you finish the tour with your 4 free drinks. You are allowed only one XXX Sparkling Ale, and any 3 of the other drinks.<br />
<br />
XXX Sparkling Ale - AMAZING. Such a pity you can't buy this anywhere else.<br />
XXXX Bitter off the wood - I can't review as they had run out... Bastards!<br />
Carbine Stout - Wow. Dark. Burnt. After you adjust to its taste it's quite good.<br />
XXXX Gold / Bitter on tap - need I say more?<br />
Hahn Premium Light - I felt insulted.<br />
Bottled Beers - as if you would bother.<br />

There is also a gift shop with a heap of junk. I meant to buy a poster and a great circular beer tray but those 4 drinks (and 2 free one I somehow ended up with) must have hit pretty quickly because I only realised the next day that I forgot to buy anything!<br />
<br />
Interestlingly, the tour guide said something about the labels for Gold or Bitter (can't remember) changing to red at some point. I think maybe he was taking the piss...]]></description>
