Secondary Fermentation:
A period of settling and conditioning of the beer after primary fermentation and before bottling.

 

Otway Estate

Otway Estate is situated in South West Victoria down towards the Great Ocean Road with the closest town being Colac. Otway Estate is an established Vineyard and Winery, in Early 2007 the microbrewery was installed and beers where produced under the Prickly Moses label. At Otway Estate you are able to taste the beer and wine made on site in the Cellar Door as well as have a meal at the award winning cafe/restaurant, Also on site there is 4.5 Star Self contained cottages nestle amongst the vines and function room facilities

Otway Estate is located right on the edge of the Otway Ranges and is blessed with the availability of pure Otway rainwater - and an abundance of such, the decision to brew with 'the gift from the gods' was made. It is well known that you need good water to make good beer and what better than water from the lush rainforest.

The name of the beers brewed at Otway Estate Prickly Moses comes from a plant, Prickly Moses is a stikey/priclky acacia that is native to the Otway region hence the name of the beers being Prickly Moses

The first brew took place on February 18th, 2007 with the release of the first two beers taking place on March 17th. A close friend of the Owners Rob Whitham from Western Australia installed, commissioned and developed the Prickly Moses beer. Due to the demand of the beer a need to find a full time brewer became apparent. In December 2007 Luke Scott started as Head Brewer, Luke was previously running Potters Brewery in the Hunter Valley and chose to return to his home state and join the team at Otway Estate.

The goal of Otway Estate is to create a real beer destination. On site at the brewery there is now 10 different beers on tap with all available in bottle form either 330 ml stubbies or 750ml Champagne Bottles.

Otway Estate as well as making a core range of beers available all year round will continue to push the boundaries of brewing releasing a range of seasonal beers available as limited release products. As well as beer and wine the brewers at Otway Estate has made a cider from local Organically certified Apples which is due for release the middle of June 2008. Only 500 litres of the cider was made so it is sure to be available for the lucky few.  

The brewery at Otway Estate is 10 hL and all the beer is brewed and bottled on site. Brewery Tours are available and operate daily at 11 am and 3 pm, a range of tours are available that encompass all sections of the business including the brewery, winery and food matched with the beer and wine for a complete experience.
