Bottle Conditioning:
Bottle conditioning is a secondary (or tertiary) fermentation process which occurs when yeast and sugars are added directly to the bottle during the bottling phase. This assists the beer with a slightly higher alcohol content, but more importantly a longer shelf life without the need for preservatives.

The Mudgee Brewery Origins

Every Boxing Day, we have been getting together with our school mates for a BBQ. In 2001, the idea was floated that Mudgee could do with a brewery. Considering the long history of brewing in Mudgee, our growth as a tourist area, and the increasing interest in micro-brewing, it was a no-brainer. The Mudgee Brewing Company was born.

Our promise is to create the true essence of beer.

Every single beer that comes out of our brewery has been made the traditional way, with a whole lot of love, no preservatives, and nothing unpronouncable. Just fresh, wholesome ales and lagers that, unlike bulk-made beer, are true-to-style, full of taste, always drinkable, and just a little bit different from the rest.
