Bulk Priming:
A technique used to prime your fermented beer in a single batch rather then individually as you would when bottling. Most people combine a mixture of water and sugar in a second vessel and rack the fermented beer on top of the sugar mixture. They would then bottle from the mixture without adding any sugar to the bottles as it has already mixed with the 'bulk' amount. A hit and miss technique, with as many failures as successful uses. Can also be used in kegging if your gas has run out.
Mikkeller
The story of Mikkeller is the story of two young homebrewers, who in a few years went from hobby brewing at home in the kitchen to national and international recognition. Already in Mikkellers first year as a brewery (2006), the two creators, Mikkel Borg Bjergsø and Kristian Klarup Keller, were named Danish brewery of the year and the fifth best brewery in the world. In Denmark it was the association of Danish Beer Enthusiasts’ more than 11.000 members, who awarded Mikkeller the best Danish brewery, while it was the international beer website RateBeer.com that placed Mikkeller among the absolute world elite on the yearly RateBeer Best list from January 2007. Since then things have changed for the small brewery. Kristian Klarup Keller, who is also a journalist, got an attractive job offer as an editor for the well renouned music magazine Soundvenue. After heavy thoughts he decided to take the job, which also meant a farewell to Mikkeller. Since August 2007 Mikkel Borg Bjergsø has run Mikkeller on his own. But the recognition didn't stop then, and after a number two spot in 2007 Mikkeller was awarded Danish brewery of the year for a second time in 2008. At Ratebeer Mikkeller got 6th amoung the worlds best breweries in both 2007 and 2008. The succes is partly due to the brewerys focus on creating challenging beers that test the boundaries and where quality always comes before quantity. In other words, uncompromising beer. The brewery want to challenge the Danes’ taste buds with intense taste adventures, and some of the inspiration is found on the other side of the Atlantic Ocean where the American breweries aren’t afraid to play and break all the rules. Mikkeller wants to provoke some of this inventiveness in Danish beer brewing, so why not show the way?
