Decoction:
An intense form of mashing in which small portions of the mash are removed, heated in a seperate vessel and then returned to the original vessel. This technique is used to raise the temperature of the original vessel as well as manipulating the characterstics of the resultant beer.
Witbier
A Belgian style being utilised by many breweries in Australia. It is a very cloudy and pale style due to its unfiltered nature and high level of Wheat Malt in the mash. Always spiced, generally with Coriander and Orange Peel although other spices have included Ginger, Nutmeg or Cinnamon in some examples.
Wits will have a high level of carbonation and often a minor tartness which can turn some drinkers off the style.
Witbiers are often called White Beers due to the colour and cloudiness presented by the style.
