Bottle Conditioning:
Bottle conditioning is a secondary (or tertiary) fermentation process which occurs when yeast and sugars are added directly to the bottle during the bottling phase. This assists the beer with a slightly higher alcohol content, but more importantly a longer shelf life without the need for preservatives.

Russian Imperial Stout


Originally a style inspired by brewers in the 1800s to win over the Russian Czar and surive the brutal shipping conditions of the time, this high alcohol stout has plenty of malt character. Typically carbonated to a low level and contains huge roasted, chocolate and/or burnt malt flavours with a dry finish.

Some examples have suggestions of dark fruit or berries, and the alcohol is typically quite evident. Hop character can vary from very little to very aggressive depending on the brewer.
