Bulk Priming:
A technique used to prime your fermented beer in a single batch rather then individually as you would when bottling. Most people combine a mixture of water and sugar in a second vessel and rack the fermented beer on top of the sugar mixture. They would then bottle from the mixture without adding any sugar to the bottles as it has already mixed with the 'bulk' amount. A hit and miss technique, with as many failures as successful uses. Can also be used in kegging if your gas has run out.

Brewed with Lager Yeast to let the wheat shine through. Cristal is light, refreshing and cleansing with a fruity aroma and a distinct citrus note. The palate is light and crisp with a refreshing tartness derived from the wheat malt. Great with seafood.

| Matilda Bay Cristal - There is practically no aroma, and the little there is reminds me of wheat malt - but its only a guess and if I hadn't known it was a wheat beer I probably wouldn't pick it. It pours quite well with a lasting fluffy white head, is carbonated well and is pale yellow in colour - although the colour is no surprise given it is bottled in a clear bottle. Flavourwise I fail to see any resemblence to the original Redback as none of the flavours are recognisible - well not to me anyway. Cristal is thin bodied, slightly malty and a distinct lack of bitterness that ends with a dry flat aftertaste (described by my girlfriend as a 'twang'). All pretty much the opposite of the original so it is amazing that a change in yeast can have such an impact. Perhaps it is just my taste and there will be those amongst us that will enjoy this beer more than I - but I will stick to the original Redback from now on given the choice. All said and done it was very refreshing to have on a Sunday afternoon having just completed a few chores around the house. |
